Purslane leaves known as duckweed contains more omega-3 fatty acids than of fish oils. It leaves also provides six times more vitamin E than spinach and seven times more beta carotene than carrots.

The leaves are somewhat crunchy and has a slight lemony taste. Many people use it as a substitute for spinach in many recipes.
